The Unforgettable Baked Ricotta Cheesecake

Have you ever tasted something so incredible you did not want to swallow it? That is the feeling I got the first time I tasted Italian cheesecake.

Most cheesecakes are heavy and they sit in your stomach like a stone. You can practically hear the thud after you swallow. The taste is not really something anyone remembers which is why it is dressed up with sweetened fruit toppings.

The Italian cheesecake I remember was very light. It was baked and needed no topping. I scoured the internet until I finally found it. I was elated. I did not care if it was a mail order cheesecake, I had to have it. When it arrived and I sat down to eat it, I felt like my mouth was having a party. It was everything I remembered; light, fluffy, baked ricotta cheesecake. Now that I know where to get my Italian cheesecake, I never have to eat another imitation.
